Barrel 1, simply put, is the first oak barrel we acquired. It is
very special to us, it is the barrel we created our house yeast culture
in. This beer is the basis for all of our Connecticut Wild Ales. We used
Barrel 1 to develop our house culture, a blend of microflora and wild
yeast cultivated as the barrel is filled and refilled. It is an
exploration of, and homage to, some of our favorite beers.
We have inoculated this barrel with dregs from a variety of some of
our favorite breweries. Barrel 1 explores all we look for in a wild ale –
funk, barnyard, and sour acidity. It is an expression of yeast that
can’t be described without experiencing it.
