Provenance began as a vision towards the future of our wild ale
program – spontaneously fermented wild ales. This beer marks the first
spontaneously fermented beer to come from Dark Side Brewing. It was
brewed on April 23rd, 2018 and bottled in June of 2019. It is a
testament of patience, time, and biology. This beer follows in the
footsteps of its Belgian predecessors – turbid mashed, made with aged
hops, and coolshipped (cooled down outdoors while whatever yeast is in
the air falls into it).
Upon first smell, you’re greeted by waves upon waves of peach flavors
– not just ripe peach, but candied too. This beer is dominated by a
palate of ripe peach, honeysuckle, wildflowers, and a solid oak backing.
